Healthy pear loaf

Almost weekly I make a variation of a healthy sweet loaf. It's such a great snack or quick breakfast when you're in a hurry.

The pear version is my favourite though, so I thought I'd share it below. Happy baking!

Healthy pear loaf

Ingredients:

  • 1/2 cup melted butter

  • 1/2 cup shredded coconut

  • 2 pears, peeled and diced

  • 1/2 cup honey

  • 2 eggs

  • 1/2 cup plain yogurt

  • 1 1/2 cups plain flour (sometimes I do half almond meal too)

  • 1 heaped teaspoon baking powder

Method:

Preheat your oven to 180C. Line a loaf tin with baking paper. 

Mix the butter, honey, eggs and yogurt together and add in the diced pear.

Add the flour, coconut and baking powder and mix well to combine. 

Spoon the batter into the loaf tin and bake for 1 hour or until a skewer inserted into the loaf comes out clean. 

Leave to cool for 15mins before serving. 

*In the loaf pictured, I used rye flour because it was all I had. I usually use white flour though.
