Christmas baking: White Christmas

It’s the most wonderful time of year…

Christmas is without doubt, my favourite time of year. It’s now officially summer, which means long days at the beach and lots of dinner parties.

It’s also a wonderful time spent with friends and family, and lots of yummy food!

One of my favourite things to do in the lead up to Christmas - besides putting up the tree - is Christmas baking.

I always make my Christmas pudding a couple of months out, so it’s currently sitting in the freezer ready and waiting for Christmas Day.

The other goodies I’ve chosen to make this year are Peanut Butter Balls, White Christmas and Christmas Pudding Truffles.

  • 250g copha

  • 3 cups rice bubbles

  • 1 cup desiccated coconut

  • 3/4 cup icing sugar, sifted

  • 1 cup powdered milk

  • 1 cup dried fruit


Melt the copha over a low heat. Allow to cool slightly. 

Combine all the dry ingredients in a mixing bowl. Pour the melted copha over the dry ingredients and mix together.

Press into a lamington tin. Freeze for 20 minutes then cut into squares.
